Bet you cant guess what I was busy doing this Wednesday morning?!

Baked a coffee cake batch for my friends on New Years!
On the other side of things, we bought a slightly “unhealthier” treat to. New Years pretzel!? A giant pretzel! Got from Giant Eagles bakery for only $4.00!
Lunch was a tofu wrap, with a jumbo organic mango, so so good. Twas very juicy.
Plus, about half an iced tea, the other half I drank while walking around shopping today. Let me tell you, shopping around the holidays is the most crazyest thing anyone can do. Seriously

Sunrise Granola for a post workout snack. Well deserved after today workout. Try this superset 8 slow reps, with 17 fast right after, works both slow, and fast twitch muscle fibers.
It snowed like crazy last night! However the roads were pretty clear, so me and mom went shopping. We stopped at loafers bread to buy tonights dinner. It was lunch time so I got a salad with this sweet tea .
The night wasn’t very eventful, setup the table for new years, and relaxed. Loafers was great, I had the turkey sandwich on sunflower bread. Om Nom Nom!

New recipe, one which calls for coffee!
A morning granola perfect for before or after morning workouts.
2 1/2 cups organic rolled oats
1/3 cup brown rice syrup
1/2 cup natural peanut butter
1/2 cup grain sweetened chocolate chips
1/4 cup flax seed
1/2 cup unsweetened coconut
1/4 cup evaporated cane juice
1/4 cup dark roast coffee
1tsp pure vanilla extract
Mix everything in a mixing bowl
Pour mixture into 9×9 cooking pan
Spread evenly, and press mixture down firmly
Bake 325 F for 20mins
Let cool for 30-40mins
crumble up!

Wahoo! Christmas is finally here! This year was a major bench mark. I learned so much from last year, and enjoyed every single bit of it!
This Christmas I felt so fortunate. I have a happy, fun, and healthy family! They really make the holidays fun. When I woke up this morning, 8:00 by the way! Wow, thats the latest ive slept in since, well I cant quite remember. After breakfast, which was boring “greek yogurt” We opened some presents.

I was greeted nicely after school to two nice things.
A card from Dicks Sporting goods wishing me a Happy Holiday!
And a good looking oat bar for a lil snack. Yum! Diffidently turned out good, my taste buds told me so . It also gave me a ton of energy for this evenings workout.
Which was a hella fun! I worked on shoulders, back and bicep mostly.
After working out I came home to catfish minus the whiskers.
And Fur…
So let me ask you. What is the holidays about?
Christmas trees?
Frost bitten knees?

Just wanted to wish you all a happy morning, I had to get up an hour early to finish a school report… due… today… So I had some fage 0% with granola, and a side luna protein.
A nasty picture, but hey! I’m in a hurry to get da job done!

I woke up well rested, around 7:00, and headed downstairs to eat some grub. Oikos with granola was calling my name so I made a fairly big bowl of just that.
It was so cold outside, freezing… I warmed up on the elliptical.
Wahoo, what a workout, I think I burned more than 350 calories because I was really moving. My knee was so sore today that elliptical was the only option. Runners pains = suckage…
The workout did the trick, I was finally warm. Todays a Steelers game, so dads off to tailgate. I gave him my koka moka bar I bought yesterday for some energy .

Mornings, don’t ya love them!?
I finished up a jar of peanut butter on some whole grain bread for breakfast. A gooey meal for my morning fitness classes.
With vanilla soy milk and a pear of course!
New Luna Bar!
I packed a luna protein bar for my post workout snack. A new bar from luna, and very delicious. Its like a smaller/lower calorie clif builders bar.
Then left for the gym, it was so snowy outside!
After sliding all over the place, we finally got to the gym for spinning and a power hour class.

Woke up to oikos vanilla yogurt, cereal, blueberries, and what? could it be? Sean’s eating a chocolate muffin?
Yesterday shopping, I came across a product I see runners kitchen eating all the time. They are called vitatops, 100 calories, and very little fat. A very healthy “muffin”. I toasted mine for about 2mins for a warm treat this morning.
Today I was loaded with school work, drenched… Which made me pretty tired. I ate a peanut butter sandwich, apple, and soybeans while studying.
When I got home I lifted, and did a spinning class. It felt great after a long day of

Got home late today, and decided to bake. I love to bake, it relaxes me, and makes me feel so accomplished . Today’s recipe was vegan coconut chocolate oat bars.
2 1/2 cups organic oats
1 cup organic whole wheat flour
1tsp baking soda
1tsp pure vanilla extract
3/4 cup organic shredded coconut
8oz organic apple sauce
1/4 cup organic dark chocolate chips
1/4 cup organic brown rice syrup
1/3 cup chocolate soy protein
2oz chopped pecans
2oz slivered almonds
Preheat oven to 325 F. Grab one 9×13 inch cooking pan.
In a large bowl combine all ingredients, and mix like crazy.

My run went well. I always enjoy a good morning run. I did 5miles at 8.5mph. Around 7min miles the whole run. Iced my feet after the run so they don’t swell! Hopes they don’t because that hurts .
After I finished iceing my poor feet, I took a good look at our tree. It seems so much bigger inside! I love the bright lights, and colors.

Today called for a whole wheat bagel, with sugar free, all natural blueberry jam! Very enjoyable before spinning, and power hour class. Spinning today was hardcore, we had a circut that was 2mins sitting high resistance, 1min standing high resistance, 30secs hover, and 30secs sprint fast as possible.
After class I fueled with a kashi TLC Peanut butter bar. Not going to lie, I love kashi.
We were running kinda late after class, so we revved the engines to get home to meet some friends. We all went to cut down a Christmas tree! We found a xmax tree farm many years ago, and ever since we cut down

Leaving for school was nice, it was bright, sunny, and 1/2 day!
Before leaving for school I snacked on a Kashi TLC Pumpkin bar, Also bright and sunny.
School was CoLd today! Walking around campus was slightly painful today, every time the wind blew it felt like tiny needles biting your skin. I couldn’t imagine running today, if its even possible.
Lunch was a bright assortment of veggies, a pear, and a whole wheat roll from loafers. Only thing missing was coffee!
Tomorrows spinning, muscle pump, and off to cut down a christmas tree! Very fun, stay warm!

There you have it! 2hr delay today because of 16 digree weather, with 0 digree wind chills. Thats what I’m talking about! Not a good day for running, or biking, but a great day to kick back and enjoy a short/easy Friday.
Breakfast was dejavu from yesterday, but still worth posting. I had to finish that last bit of cereal in the box .
And, a nice cup of coffee while posting. Dont ya love that fresh smell of starbucks in the morning? I do!
